There’s something about gingersnap cookies that just feels like the start of Christmas. That warm mix of cinnamon, ginger, and cloves, it smells like cozy mornings. These cookies are soft and chewy with crisp edges, full of that classic holiday spice that makes every bite feel like a warm hug.

It’s November 2nd, and I can officially say I’m in full holiday mode! 🎄 I actually put up my Christmas tree yesterday (yes, I couldn’t wait!), and this morning, with the time change throwing me off and waking up early and feeling like it’s already late so, I decided to bake something that matches my cozy, slightly sleepy mood: gingersnap cookies.

My First Gingersnap Attempt (and a Little Mishap)

This was my first time making gingersnap cookies, and I’ll admit — they didn’t go perfectly! Most blogs show flawless cookies, (and I admire each one of them, honestly.) but here at Marie’s Cozy Corner, I like to share things as they really are and my mistakes that I learn from.

So, here’s my little baking confession: I completely forgot to roll the cookies in sugar before baking! 😅 Halfway through, I realized my mistake, pulled the tray out, and quickly sprinkled sugar on top of each cookie before popping them back into the oven.

And guess what? They still turned out amazing. Soft, chewy, and full of flavor. The sugar melted slightly and gave them that sweet sparkle on top. So, I guess it’s alright. And still came out beautifully.

The Smell of Christmas in the Kitchen & some details

The moment these cookies started baking, my kitchen filled with that rich, spicy aroma — the perfect mix of molasses, ginger, and cinnamon. I did tone down the cloves a bit (they can be a little strong for me), and I chilled the dough for 30 minutes in the freezer before baking to help them hold their shape.

Each cookie was around 60 grams, and halfway through baking, I gave the tray a gentle tap to help them spread out for that chewy, slightly flatter texture I love.

They came out soft in the center, crisp around the edges, and oh-so-cozy. Truly, these cookies taste like the beginning of Christmas.

How to make Gingersnap Cookies

I like to keep things simple when I bake, so for these chewy gingersnap cookies, I used just one bowl. And honestly, it works just fine! Start with the wet ingredients: egg, oil, molasses and sugar. Mix everything until smooth.

Then add the flour with the spices all together. Baking powder, baking soda, cinnamon, ginger, cloves, and salt. Mix everything until well incorporated and a soft dough form. I like to pop the dough in the freezer for about 30 minutes to help it firm up and make it easier to handle. Once it’s ready, scoop about 60 grams per cookie.

Normally, you’d roll each one in sugar before baking, but full disclosure — I forgot! I ended up sprinkling sugar on top halfway through baking, and it still turned out perfectly. Bake at 350°F (175°C) for about 15 minutes, and halfway through, give the tray a gentle tap on the counter for those flatter, chewier edges. Let them cool just a bit before digging in. Your kitchen will smell like Christmas, and you’ll be surprised how easy one-bowl baking can be!

Ingredients

  • 180 g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1 tsp salt
  • 100 g brown sugar
  • 50 g molasses
  • 80 g vegetable oil
  • 1 egg
  • ¼ cup granulated sugar for rolling or sprinkling

Instructions

  • In a bowl, mix the brown sugar, molasses, oil, and egg until smooth.
  • Whisk together the flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt. (You can use another bowl to combine the dry ingredients or just combine it along with the wet ingredients using one bowl.)
  • Combine the wet and dry ingredients until a soft dough forms.
  • Chill the dough in the freezer for 30 minutes to help it firm up.
  • Scoop about 60g of dough per cookie. Roll each one in sugar (or sprinkle halfway through baking if you forget — it still works!).
  • Place on a baking sheet and bake at 350°F (175°C) for 15 minutes.
  • Halfway through baking, gently tap the tray on the counter for flatter cookies.
