In a bowl, mix the brown sugar, molasses, oil, and egg until smooth.
Whisk together the flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt. (You can use another bowl to combine the dry ingredients or just combine it along with the wet ingredients using one bowl.)
Combine the wet and dry ingredients until a soft dough forms.
Chill the dough in the freezer for 30 minutes to help it firm up.
Scoop about 60g of dough per cookie. Roll each one in sugar (or sprinkle halfway through baking if you forget — it still works!).
Place on a baking sheet and bake at 350°F (175°C) for 15 minutes.
Halfway through baking, gently tap the tray on the counter for flatter cookies.
